Chile qualifies for the Bocuse d’Or Grand Final as the third best country in America, behind the United States and Canada

This excellent result obtained by Chile in Bocuse d’Or is added to the American title obtained by the Chilean team La Roja Dulce, which also qualified for the Grand Final of the Pastry World Cup, during the competitions held in Santiago. Chile obtained the third place in the continental final of the Bocuse d’Or, the most important gastronomic contest in the world, which took place during this day in Metropolitan Santiago. Encouraged by their followers and the desire to honor their gastronomic heritage, chef Ari Zúñiga and his assistant Javier Sobarzo prepared for the starter a quinoa with potato confit, stuffed with stewed quinoa with vegetarian crunch and pickled topinambur petals. The main course, a cured salmon, stuffed with pistachio farce, wrapped in chapalele, a traditional potato dough from Chiloé. The United States, represented by Jeffrey Hayashi and his assistant Franco Fugel, won first place in these continental selections. After offering the jury an impressive culinary experience that combined a 100% vegetable theme in the quinoa and pave mushroom-based dish for the starter and roasted and confit salmon with brown butter jus and beet and pistachio garnish for the platter-served ensemble. Canada, meanwhile, finished in second place on the podium, led by chef Samuel Sirois and his assistant Léandre Legault-Vigneau, who prepared a “vegetable world” surrounded by quinoa, carrots and onions for the dish theme, and a preparation inspired by salmon spawning for the tray theme. Together with them, Colombia and Mexico, in 4th and 5th place, respectively, also qualify to go to the Grand Final of the Bocuse d’Or to be held in Lyon in January 2023.
