The United States, represented by Jeffrey Hayashi and his assistant Franco Fugel, won first place in these continental selections. After offering the jury an impressive culinary experience that combined a 100% vegetable theme in the quinoa and pave mushroom-based dish for the starter and roasted and confit salmon with brown butter jus and beet and pistachio garnish for the platter-served ensemble.
