The United States, represented by Jeffrey Hayashi and his assistant Franco Fugel, won first place in these continental selections. After offering the jury an impressive culinary experience that combined a 100% vegetable theme in the quinoa and pave mushroom-based dish for the starter and roasted and confit salmon with brown butter jus and beet and pistachio garnish for the platter-served ensemble. Canada, meanwhile, finished in second place on the podium, led by chef Samuel Sirois and his assistant Léandre Legault-Vigneau, who prepared a “vegetable world” surrounded by quinoa, carrots and onions for the dish theme, and a preparation inspired by salmon spawning for the tray theme.
