The main course, a cured salmon, stuffed with pistachio farce, wrapped in chapalele, a traditional potato dough from Chiloé. The United States, represented by Jeffrey Hayashi and his assistant Franco Fugel, won first place in these continental selections. After offering the jury an impressive culinary experience that combined a 100% vegetable theme in the quinoa and pave mushroom-based dish for the starter and roasted and confit salmon with brown butter jus and beet and pistachio garnish for the platter-served ensemble.
